Filled with butter, cream, and more butter and cream, it's not exactly the most waist-friendly dish when you go in for seconds. A simple way to lighten up the dish without sacrificing flavor is to be picky about what variety of potato you use.
Instead of oft-used Russet potatoes, go for Yukon Golds or Yellow Finns. It might seem peculiar that switching out the type of potato makes a difference, but these smaller varieties are naturally creamy and sweet, and their skins taste like butter, which allows you to cut down on the amount of butter and cream you would normally add to the dish. When shopping for Yukon Golds or Yellow Finns, look for smaller ones that aren't much bigger than one inch in diameter. Also, the more yellow the potato, the better: it's the vitamin A contained in the skin that give these potatoes their golden hue. There's potassium in the skin too, so when making your mashed potatoes, don't peel! Since the skins are pretty thin in these potato varieties, they won't detract from the creaminess of your dish when you leave them on.

Blue Jay Is a Heartbreaking New Romance With Sarah Paulson, and It's Coming to Netflix
American Horror Story just wrapped up season six, with series veteran Sarah Paulson back in the cast, but like every season, with blood, gore, and other atrocities, and some of us just didn't have the energy (or the stomach). It's a shame, since stars like Paulson are extraordinary actors, which is why her film at the Toronto International Film Festival was on my must-see list.
Blue Jay stars Paulson and Mark Duplass, who also wrote the film, as high school sweethearts who run into each other after 20 years or so. I'm grateful I caught a screening of the movie, because it was one of my favorites of the festival. Though it's resolutely unflashy and the kind of indie only your film buff friends might have heard about, it should be on your must-see list too, because it's a heartbreaking, worthwhile romance - and, fulfilling the ultimate needs of convenience, it'll be on Netflix on Dec. 6.
Two caveats: Paulson and Duplass are nearly the only actors in the film, and it's in black and white. The heavily dialogue-based movie may not be for those with short attention spans, but if you ever watched and enjoyed the Before Sunrise series, you will love this. As Jim and Amanda, Paulson and Duplass spend one whole day together after bumping into each other in their hometown, and as they walk, talk, and stop by their old haunts, we learn more and more about their past relationship. While Jim and Amanda have unresolved issues that are specific to them as a couple, anyone who has ever been in love or had a past relationship haunt them like a ghost will relate. And like me, you may end up sobbing a bucket of tears by the end of the movie.
It's a welcome respite to Paulson's intense TV endeavors, but her acting is more stunning than ever. You'll have a chance to check out Blue Jay for yourself when the movie hits Netflix on Dec.6. Watch the trailer now:

Adorable 86-Year-Old Man Taught Himself to Knit to Make Tiny Hats For Preemies
When many adults hit their 80s, life simply revolves around early bird specials and the latest card games, but Ed Moseley wanted to use his 80s to give back. The 86-year-old man was excited when his assisted living facility announced that they'd be working on a project knitting hats for premature babies, but the only problem was he had no idea how to knit! Moseley asked his daughter to teach him, and with the help of a kit, yarn, and instructions, in just four days he was helping premature babies sleep more comfortably.
Before he knew it, Moseley's entire couch at the Dogwood Forest Assisted Living Community was covered in hats. He did most of his knitting while watching TV and even encouraged other residents to get involved. Moseley made 55 of the 300 colorfully warm hats donated to babies in the NICU at a hospital in Atlanta, GA, and on Nov. 17 - World Prematurity Day - Moseley and other Dogwood Forest knitters delivered the hats to the babies in need. Moseley and his care manager, Lisa, plan to make an additional 30 hats a month.
"When someone appreciates something you do, that makes you feel good, naturally," he told ABC News. "I got a lot of enjoyment doing this and now I've graduated to large caps. I'm doing caps for all my grandkids."

Help! My Pie Dough's Crumbly
You skipped the store-bought stuff in an attempt to make your own crust from scratch, but the dough won't stop breaking apart when you try to roll it out. What should you do?
If the pastry is crumbly and difficult to roll, then the crust is most likely too dry. Adding moisture will help the dough become more coherent.
Add a few sprinkles of cold water (no more than a teaspoon at a time), handling the dough as little as possible until it's evenly moistened. Is the dough cracking only a tiny bit at the edges? If so, it simply needs to warm up a little bit - but not too much, otherwise the crust won't come out flaky.

We've learned quite a bit about Kate Middleton since she officially joined the royal family in 2011, and getting to see her many milestones as the Duchess of Cambridge has been a real delight. Even though her new life as a duchess has afforded her the same opulent jewels, lavish living quarters, and frequent public appearances as everyone else, there's one thing Kate has that none of the other women in the family do: a college education.
When Kate and William met in 2001, they were both students at University of St. Andrews in Fife, Scotland. Here's Why You Should Turn Off This iOS Feature ASAP
Our phones are never truly safe, and one security expert and YouTube video are proving that. Both the expert and YouTube user have found a new way someone can hack into your iPhone and access your photos - just by using Siri.
Graham Cluley discovered the hack and detailed it on the blog Hot For Security. To access your photos and contacts, all someone has to do is ask "Siri who am I?" and Siri will show your phone number and a series of options. The hacker then calls your phone from a different one and selects to answer the phone call via text message. Once you're on that screen, you can ask Siri to turn on "Voice Over." At this point, to access your private photos, all the hacker has to do is go back to the text message screen and tap on the area where your contact's name is and then tap on the keyboard right after. Once that's done, you can create a new contact, and by selecting "add photo," you can see all of the photos on the iPhone.
However, Cluley states you can avoid this for now by going to Settings > Touch ID and Passcode > Disable Siri on Lockscreen. If you're curious about how this hack works, watch the video by YouTube user EveryApple Pro below.
This isn't the first time someone found a way to hack into an iPhone using Siri. Hopefully, Apple releases a security update soon that addresses this issue. For now, turn off Siri on your lock screen and take as many steps as you can to prevent any type of hacking.

How to Perfectly Season Your Thanksgiving Turkey
Before you even think about cooking your Thanksgiving turkey at the perfect temperature, you have to know how to season it. From figuring out the right amount of salt to the best blend of spices and herbs, it can be daunting to prepare an entire turkey that you hope the whole family will love. These are the foolproof methods to seasoning a turkey to ensure maximum flavor and juiciness.
Salt Liberally
First things first: your raw turkey needs a lot of salt. The right amount of salt for a turkey is two tablespoons of kosher salt plus one teaspoon of freshly ground black pepper. It's recommended to sprinkle the salt and pepper evenly on the outside of the turkey, as well as a little bit inside the cavity, and then refrigerate uncovered for one to two days prior to cooking. The salt permeates the meat and makes it even juicier, while the skin will dry out slightly and crisp up in the oven.
Brine the Easy Way
When you follow those steps for salting a turkey, you're essentially taking a brining shortcut - as you should. The difficulty with brining, or soaking in salty liquid, is it requires a big bucket or container to fit in your fridge. Moreover, some say that brined turkey can be too juicy - even waterlogged. Dry brining a turkey eliminates the hassle while still resulting in the same level of flavor.
Choose the Right Herbs
An herb-roasted turkey is an elegant and more sophisticated way to go. Earthy, fresh herbs like rosemary, sage, and thyme are the ultimate match for turkey. When combined with garlic, olive oil, salt, pepper, and lemon juice, the herb coating easily spreads all over the turkey and under the skin. Additionally, stuff the cavity with whole sprigs of herbs that you can easily remove after roasting.
Coat in Compound Butter
Compound butter, or butter seasoned with spices and herbs, is a fantastic addition to most meats, especially turkey. Make a compound herb butter with unsalted butter, sage, rosemary, thyme, and salt for an irresistible herb-butter roasted turkey. Spread the butter evenly over the skin and inside the cavity of the turkey for golden-brown skin and flavorful drippings for a pan gravy. You can even use the leftover compound butter dolloped on top of your mashed potatoes.
What to Do If Your Turkey's Still Frozen
If it's crunch time and you've reached for the turkey in the fridge only to realize it's still a frigid solid mass, don't freeze: we've got some methods for quick thawing, pointers for how to know when your turkey's completely defrosted, and what to do if you don't have time to thaw your bird.
For our favorite quick-thaw method, try submerging the turkey (breast-side down with its wrapping still on) in a sink or a cooler full of cold water, changing out the water every half hour. Allow 30 minutes to thaw for each pound of turkey. FYI, a 16-pound turkey will take eight hours. (If math's not your thing, then simply plug the weight of your turkey into this defrost calculator.)
Once you've allowed your turkey to thaw, perform two tests on the bird to confirm that it's completely defrosted: reach your hand into the bird's cavity to make sure there aren't any ice crystals, and poke the thicker parts of the turkey with a fork. If you get icicles doing either one of these, then your turkey needs more time to warm up.
Hours of thawing time may not be an option, in which case you can simply cook the bird in its frozen state: Allow four-and-a-half to six hours, as opposed to the usual three-and-a-half hours, to cook a 12- to 13-pound thawed turkey. Don't stuff it; this will up the cooking time even more. When ready, the turkey should reach at least 165ºF at the thickest part of the inner thigh.
Burning Question: At What Temperature Is a Turkey Cooked?
No matter what kind of turkey you'll be having this year, there's one question you'll need the answer to: what temperature does a turkey need to reach in order to be considered done?
Until 2008, the USDA recommended cooking turkey to an internal temperature of 180ºF. But based on the fact that bacteria threat salmonella cannot withstand temperatures of 160ºF after 30 seconds, the FDA now suggests a minimum internal temperature of 165ºF as measured by a food thermometer in the innermost part of the thigh and wing and the thickest part of the breast.
The FDA doesn't really account for the fact that the breasts cook slower than the thighs. Turkey experts like Butterball recommend cooking the breast to 165ºF and the thigh to 180ºF. The key number is the breast temperature, so stress less about the thigh temperature (as long as it's over the 160ºF ballpark). And, if you really want the juiciest white meat possible, factor in carry-over cooking. America's Test Kitchen says to pull the bird out of the oven at 160ºF, since the residual heat from the meat will raise the temperature to 165ºF as it rests for 15-20 minutes (but no more than 30).

What Happened When I Didn't Hold My Son to the Same Standards As My Daughters
A few weeks ago I was sitting at my desk when I heard a commotion coming from the kitchen where my three kids were finishing lunch. Now that they're 16, 15, and 11, I no longer have the kneejerk reaction I once did to come running, fearful that someone was either hurt or needed immediate assistance. From my desk in the next room, I made the call to hit the mute button in my head, and I ignored them. When I did finally make my way into the kitchen to refill my coffee cup, my daughters, who were by this time alone, pounced on me.
"Did you hear what he called you?!" the girls yelled in unison, each of them talking over the other, trying to get a word in edgewise.
The he that they were referring to was their younger brother. The elder of my two daughters went on to explain that, after my son had eaten lunch, he got up from the table and left his plate behind. Both girls threw a fit, ordering him at once to clean off his plate and put it in the sink.
Feeling the heat from his sisters, my son, wisely, did what they told him but not before justifying his "malfeasance" by explaining that he "thought the cleaning fairy would do it."
My daughters stared at me, waiting for me to "get" it. But I didn't.
"Who's the cleaning fairy?" I naively asked.
"You!" they both began yelling again. "You're the cleaning fairy! He called you the cleaning fairy!!"
I turned to my son, who stood in the dining room within earshot, laughing at the commotion he was causing.
"Did you call me the cleaning fairy?" I asked in disbelief.
"I was just kidding, Mom!" he giggled hysterically.
I believed him. But the irony wasn't lost on me.
"Who's the cleaning fairy?" I naively asked.
There has been a long-standing joke in our family where my kids say to one another that he or she is my favorite. "Mom loves me more!" or "I'm her favorite!" are statements frequently heard around our house, most often when they see me hugging or cuddling with one of their siblings and suddenly feel left out.
Of course, I'll tell you like any other mother would, that I love each of my children equally. And I do. Even so, my daughters often complain, and not so tongue-in-cheek, that I give my son preferential treatment. That when it comes to cleaning up after himself and assuming the same chores I assigned to them when they were just about their brother's age or even younger, I give him a pass.
Hearing that my son called me the cleaning fairy, however, forced me to face the possibility that my girls have a point. What troubled me more was the reason for why I was behaving this way.
Nearly five years ago I separated from my husband after more than 16 years of marriage. To complicate matters further, not only was I divorcing, I was about to assume full physical custody of my children as my husband made the unilateral decision to reside permanently in Hong Kong 8,000 miles away. I did not, and do not, have childcare. I became a single mom.
For a long time, I tried to do it all. All of the cleaning, all of the tidying up, all of the errands, all of the cooking, all of the laundry, and all of the paperwork. What I quickly realized was that I couldn't do it all, especially if I was going back to work, which I would need to do shortly. With the mounting pressure beginning to wear me down, I knew something had to give. It was time to get creative.
That's when I began to delegate. The first task I assigned the girls was to make their beds in the morning. This required me giving my daughters each a detailed tutorial on how I like their beds to look and, more than that, my commitment, as the Disney song tells us, to "Let it go" if the result is not perfect. I won't lie; passing off this daily chore was difficult at first but, ultimately, changed my life. My mornings suddenly became less rushed and less stressful as a result.
Next, I gave up plating their dinner for them. Instead, I began serving meals "family style" from my kitchen island where the girls could help themselves. I also required that they set the table, clear their plates, and turn down their beds. Yes, in a former life, I even offered turndown service, without the mint, though I did consider putting one on their pillow once just for laughs.
For the grand finale and biggest timesaver ever, I required that the girls manage their laundry from start to finish, including washing it, folding it, and putting it away.
But somehow as my son came of age, I failed to give him his assignments as I did my girls.

Instead, I consistently warned him that the next time he would be held accountable, which ultimately resulted in the cleaning fairy comment a few weeks ago, and my wake-up call. Ever since, I have been correcting the situation, gradually, so he doesn't interpret his increasing responsibility as a punishment. It's not.
Once upon a time, when I was a child, I watched my mother cater to my father, never once making demands that he help out around the house, wash the dishes after she had cooked, or take out the garbage. When I married my husband, I carried on the family tradition and assumed full responsibility for all of those chores that were deemed "less than" because I didn't work outside the home and he did. With my son busy participating in a different team sport each season and having more homework as a result of his recent entrance into middle school, I recognize that I was, without my even knowing, teaching him and my two daughters the same lesson that was taught to me years earlier.
On the day my son called me the cleaning fairy, I acknowledged that I had screwed up. Big time. By not setting for my son the same expectations I had set for my two daughters, I not only was telling him that he is superior to his sisters, his female "colleagues" in our family if you will, I was also telling my daughters that they are inferior to him. Thankfully, they had the right idea to complain to "management," and I had the sense to listen, giving them the empowerment they asked for and, more importantly, deserved. But I know all too well that had I not, over time their forcefulness would wane, and the cycle would perpetuate as it once did for me.
Now if my son leaves his plate on the table, I tell him he must clean up after himself. I supervise while he prepares his lunch for school. And I have begun broaching with him the subject of making his bed and doing his laundry, first by requiring that he bring his dirty clothes downstairs and then teaching him how to sort them. All in all, my son is doing well, feeling more capable each day. I am, too. As for that cleaning fairy? She didn't fare as well and was never heard from again.
