She introduced to me these herb-flecked feta biscuits, which I had no problem scarfing down (I may have eaten two, despite their large size). These biscuits have enough verve and spunk to be great on their own, but I'd imagine that they'd also make for a decadent breakfast sandwich, split in half and layered with fried egg, bacon, and a slice of gooey mild cheese like fontina.

Herbed Feta Buttermilk Biscuits

Melted butter will likely pool around the biscuits when baking. Be sure to remove the biscuits to a wire cooling rack immediately after taking them out of the oven, so that they don't absorb it and get soggy. For the freshest biscuits, only bake off those that you'll eat within 24 hours; the rest can be frozen raw (stop just before adding the egg wash) and baked off from frozen at a later time. Cook for 2-3 minutes longer.

Ingredients

  1. 2 cups (10 ounces) all-purpose flour
    1 tablespoon baking powder
    1 1/2 teaspoons kosher salt
    1 tablespoon herbes de Provence
    1 1/2 sticks (6 ounces) cold unsalted butter, diced
    1/2 cup cold buttermilk, shaken
    1 cold extra-large egg
    7 ounces feta, crumbled
    1 egg, beaten with 1 tablespoon water

Directions

  1. Preheat the oven to 425ºF, and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, salt, and herbes de Provence in a large mixing bowl. Add the cubed butter, and cut in with a pastry blender until it resembles coarse cornmeal and there are no pieces of butter larger than a pea.
  3. Whisk together the buttermilk and egg in a small bowl, and pour over the butter-flour mixture. Gently fold in until just absorbed; fold in the feta until it resembles a shaggy dough.
  4. Turn the dough out onto a lightly floured surface, and knead 6-8 times, or just until cohesive. Pat out into a rough rectangle, about 1/2-inch thick. Cut into 8 equal rectangles for large biscuits, or 16 triangles for smaller ones.
  5. Brush with egg wash (the water-egg mixture), and bake for 17-20 minutes, or until the tops are lightly golden.
  6. Cool slightly on a cooling rack.

How Surfing World Champ Carissa Moore Stays Motivated When All Bets Are Off

It was already going to be an unusual year for surfer Carissa Moore. After winning the 2019 World Surf League title, the four-time world champion made an unexpected decision: withdrawing from the 2020 season to focus her energy solely on the Tokyo Olympics, where surfing was to make its debut. The break was to follow a grueling season. The world title race had come down to the last competition of the year, a three-way, all-American battle that would also decide which surfers would represent Team USA at the Tokyo Olympics. Moore took the title and the first berth; then-17-year-old Caroline Marks took the second. (Moore's dramatic, season-long journey to the title was captured in Riss, a RedBull TV docu-film released May 11.)

All of which meant that when the coronavirus outbreak accelerated into a pandemic, shutting down sports and postponing the Olympics, Moore was in a different position than many athletes. "I hadn't really started training at all," she said. In March, when the Olympics postponement was announced, she was still in relaxation mode. "I was looking at April as [the month] where the intensity would pick up."

And unlike athletes in many other sports, Moore's spot on the Olympic team is secure and will transfer over to 2021. "I feel very fortunate as a surfer, because for our team, everything got solidified fairly early," Moore told POPSUGAR. "I feel for the other sports, where people were in tip-top shape, getting ready to go into their trials."

Moore's unique situation means that her training schedule hasn't actually changed much since the shutdown. "In the mornings, I usually get up early and find some surf somewhere," she said. (Surfing is still allowed at beaches in Honolulu, where Moore lives.) In the middle of the day, she'll "get creative": reading, working in the garden, or scrapbooking. She'll train in the afternoon, doing home workouts, running, or hiking in the valley where she lives. "I'm very fortunate that I'm still allowed to do most of what I do normally," Moore said.

She's also been giving back, taking part in the World Surf League's #StayLocal campaign to support small businesses through the pandemic. The league asked athletes to make a donation to one of their favorite local businesses, promising to match up the amount up to $2,000. Around the same time, Moore said she was approached by a local representative and asked to hand out school lunches at a local elementary school, which had closed down during the pandemic.

"That got me thinking, how cool would it be if I got to kill two birds with one stone?" Moore said. Choosing Banan, a banana-based fruit soft serve shop, as her local business, Moore purchased 200 cups and brought them to Palolo Elementary School to give away with lunches.

It was a good way to practice something that Moore's been working on lately: staying present and focusing on daily goals, as simple as finishing the laundry or cleaning her house, to stay on track. "This is the first time in my whole life I've had to just slow down," she said. "The most challenging thing is finding ways to stay busy and motivated, physically and mentally." While she misses the constant on-the-road lifestyle of a pro surfer, she said she's working on finding space and peace in this moment.

"What's been helping me is finding three things to be grateful for every morning. Starting my day with a grateful heart," she said. "Just embracing the stillness. I'm trying to be as grateful as possible."

This 2-Ingredient No-Bake Cake Will Go Faster Than It Takes to Make

Any crunchy cookie should and ought to make its way into an icebox cake. That mantra inspired this chocolate chip cookie icebox cake, which tastes as if the cookies have just been dipped into a nice cold glass of milk. The chocolate chips stay crunchy, so there's still textural contrast. I didn't sweeten the whipped cream, as I think the cookies and chocolate chips add enough flavor - but feel free to splash a bit of vanilla and a few tablespoons of sifted powdered sugar. Be prepared for this cake to go fast. Really fast.

Ingredients

  1. 3 cups heavy cream
    2 packages crunchy store-bought chocolate chip cookies, like Chips Ahoy

Directions

  1. In a large bowl, beat cream on high speed until soft peaks form.
  2. On a flat serving plate, arrange 7 to 8 cookies side by side in a circle, keeping one cookie in the center.
  3. Spread 1/2 cup whipped cream on top, making a 7-inch circle. Repeat with remaining cookies and cream, making 5 to 6 layers of cookies and ending with a layer of cream (there will be a few cookies left over). Cover with a cake caddy or plastic wrap, and refrigerate overnight.
  4. Serve by slicing into the cake with a sharp knife.

Joanna Gaines's Chocolate Chip Cookies Recipe Is Simple, Yes, but It's Also So Damn Good

This year, one of the resolutions I made with my mom was that we wanted to bake more together, and so far, we're off to a pretty great start! (I think a major part of our excitement comes from using all the cute baking supplies she was gifted this holiday season.) We have a handful of both old and new recipes that we've been whipping up, but oddly enough, chocolate chip cookies wasn't one of them. I mean, they're pretty basic, right? There are also so many versions to try, so when I spotted the recipe from the one and only Joanna Gaines, my mom and I knew we had to give it a try.

But what I love the most about her cooking style is that she leaves room for human error, which is great for novice bakers like me, who sometimes mistake a teaspoon for a tablespoon.

If you like your cookies extra chocolatey and chunky, add 1/2 cup more of chocolate chips.

Ingredients

  1. 2 1/2 cups all-purpose flour
    1 heaping teaspoon baking soda
    1/2 teaspoon sea salt
    8 tablespoons (1 stick) unsalted butter (at room temperature)
    2 cups packed light brown sugar
    2 large eggs
    1 1/2 teaspoons pure vanilla extract
    1 1/2 cups semisweet chocolate chips

Directions

  1. Preheat oven to 350°F and position rack to center of oven. Line a baking sheet with parchment paper.
  2. In a bowl, whisk together dry ingredients including the flour, baking soda, and salt.
  3. In a mixer, beat butter and sugar on medium-high speed until light and fluffy. Then add eggs and beat until blended. Add vanilla and beat until blended.
  4. Turn off mixer and pour flour mixture into the bowl. Mix on medium until flour is thoroughly mixed in, then mix on high speed for a few seconds to pull dough together. Dough should be chunky.
  5. Add chocolate chips and beat on high for no more than five seconds to mix in chips.
  6. Make large spoonfuls on the lined baking sheet, but do not flatten. Bake until the tops are lightly brown; 10 to 11 minutes. The larger the spoonfuls, the longer it'll need to stay in the oven. Cool on the pan for one minute, then transfer cookies to a cooling rack.
  7. Store cookies in a tightly covered container at room temperature for up to three days.

These Chocolate Chip Cookies Are Salty and Sweet - Good Luck Not Eating the Whole Batch

Everyone is on a constant search for the perfect chocolate chip cookie - one that is dense and chewy on the inside while crisp on the outside. I'm included in that list of seekers. I've tried all sorts of recipes - including Serious Eats' so-called best chocolate chip cookies - but I'm going to get real with y'all: there's no need to brown your butter or use a special type of flour. I think I speak for the rest of us when I declare that we really just want a perfectly executed, traditional cookie without the fuss and frills.

This recipe deviates only a little from the original Toll House one. The main differences include the salt factor and the type of chocolate I'm using. If salty-sweet desserts aren't your thing, don't worry! Just use unsalted butter and forgo the flakes. However, if you're open to an experiment, you'll find that the salt enhances the caramel-chocolate flavors. Yum!

When it comes to perfect portioning of the cookies, why wing it when you can pick up a few tools to make your cookies look professional? I always scoop my cookies out with a spring-loaded cookie scoop (it looks like a mini ice cream scoop) and I bake them up on a Silpat Perfect Cookie baking sheet. The black targets on the Silpat makes it easier than ever to space out the cookie dough balls without fear that they will bake together into one glob.


The sight of cookies cooling on a pan feels like satisfaction, doesn't it? While it's nearly impossible to resist eating a cookie hot out of the oven, these beauties taste even better once cooled so the chocolate has time to solidify. Go ahead and make a batch - and make a lot of people happy!

If your cookies are spreading too thin as they bake, the dough is likely too warm. Refrigerate it for 15 minutes or so to firm it back up before dolloping out onto the baking sheet. Also, if you are baking the cookies in batches on one tray, be sure to let the tray return to room temperature before dolloping the dough onto it. Otherwise, that will also cause the dough to expand too quickly.

Ingredients

  1. 1 1/3 cups all-purpose flour
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup (1 stick) salted butter, softened
    1/4 cup plus 2 tablespoons granulated sugar
    1/4 cup plus 2 tablespoons packed brown sugar
    1/2 teaspoon vanilla extract
    1 large egg
    1 cup high-quality chocolate, like Guittard
    Flake salt, for garnish

Directions

  1. Preheat oven to 375°F. Line a baking sheet with a Silpat or parchment paper.
  2. In a large bowl, sift flour, baking soda, and salt.
  3. In a separate bowl of a stand mixer, beat butter, granulated sugar, brown sugar, and vanilla extract in large mixer bowl until creamy.
  4. Add egg, beating well. Gradually beat in flour mixture. Stir in chocolate chips.
  5. Drop by rounded tablespoon onto ungreased baking sheets. Bake for 9 to 11 minutes, until cookies are golden brown.
  6. Sprinkle with flake salt. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

I Test Tons of Hand Sanitizers, but This $12 Touchland Spray on Pre-Order Is the Best by Far

Keeping my hands clean is obviously top of mind right now, so I took it upon myself to try several hand sanitizer brands this month. I wanted to find the very best one I could rely on.
