You see, the Filipino actress wasn't always so confident. Growing up in Toronto, Mitchell noticed that her darker features looked far different from those of her classmates - a truth she worked diligently to hide. "When I was in high school, all my friends were blond with blue eyes, so to be more like them, I would dye my hair lighter, straighten it, wear contacts, and stay out of the sun so I wouldn't get any darker," Mitchell admitted in an interview with POPSUGAR. How to Roast Vegetables to Perfection
Looking for a quick, easy, and enticing way to incorporate more vegetables into your life? Roasting may very well be just the solution you need. Not only does the blast of high heat cook vegetables to fork-tender in next to no time, but it also magically caramelizes the edges, making each bite slightly sweet and all the more enticing.
Little more than a bit of prep work and roughly 20-30 minutes of cook time separates your meal from the addition of a brightly colored, mouth-watering, and rather healthy side. And while methods vary slightly from vegetable to vegetable, follow these general guidelines:
- Preheat the oven: Aside from tomatoes and other delicate produce, which shine when slow-roasted at a lower temperature (try 200°F), most vegetables benefit from a blast of high heat, as it promotes browning and caramelization; generally, 400-450°F is a good place to start.
- Prep the vegetables: Usually this just means a quick scrub with a vegetable brush and a rough chop (1-inch cubes is pretty standard), but some produce like Winter squash requires a bit of peeling and even the removal of seeds but is still very easy to prep. For oddballs like brussels sprouts, trim off the woody stems, peel away any dried-out and tough outer leaves and halve the tiny cabbages so that they have a flat surface to rest on (flat surfaces allow the most pan contact and browning). Smaller root vegetables like carrots can be left whole (just trim off excess carrot tops).
- Season the vegetables: The easiest way to do this is to drizzle a half-sheet pan or cast-iron skillet with a healthy helping of high-heat-safe oil (like grapeseed or canola) and toss the vegetables in the oil right on the pan; this also helps to grease the pan so that the vegetables won't stick. Afterward, generously sprinkle the whole lot with kosher salt and freshly ground pepper (or any seasonings you choose to incorporate), tossing once more to coat. Also, make sure to spread everything out in a single even layer so as to promote even cooking and browning.
- Jazz things up (optional): A few sprigs of hearty herbs like thyme or rosemary can be tucked in whole or minced and sprinkled on with the salt and pepper. Alternatively, try adding a drizzle of maple syrup or honey. Just make sure to line the sheet pan with parchment paper so that the sugars won't burn and stick to the pan. To ensure that the sweetener at hand evenly coats the vegetables, toss everything together in a large bowl and then spread out on the pan.
- Roast away: This will depend greatly on the density of your vegetable, the size of the pieces, and how hot you choose to heat your oven, but most will be ready to eat in about 20-25 minutes, with tougher varieties like Winter squash requiring up to 40 minutes. When trying out this method, use common sense and check often; the vegetables are done and ready to eat when they're fork-tender and have begun to brown.

This Hack Will Forever Change the Way You Cut and Juice a Lime
If you're struggling to get a decent amount of liquid out of a lime, turns out you might be cutting it all wrong. Here's an easy hack to get almost triple the amount of juice. Instead of cutting the lime in half, you can make cuts on all four sides of the lime, leaving the center untouched, and you'll be able to squeeze so much more juice out of the sides, according to an image posted by Reddit user regularoldballoon. I wanted to see if it really worked, and spoiler: it 100 percent does! I'm never going back to the old way. Here's how to perfectly cut a lime to get the maximum amount of juice every time, because limes are expensive.
Stand the lime up vertically on a cutting board. You might want to carefully cut off the bottom tip to make this easier (and safer!). In a similar way that you would slice around the core of an apple, use a sharp knife to cut all four sides (or cheeks) of the lime, coming close to the stem. You'll be able to squeeze out all the juice from the cheeks with little effort, and you can even get a few more drops from the core.
You can clearly see the difference! When I sliced a lime in half, I got less than a tablespoon of juice, and the other lime yielded more than double that amount. Your guac and margaritas are about to be better than ever.

It involves shaking the egg in a glass cup with a bit of water until the eggshell breaks into a million shards. It seemed completely unfathomable until I tested it out myself and discovered it's completely legitimate! Here's how it's done.
Fill a glass cup or a mason jar with about 1/2 inch of water. Then add the egg. If you have a mason jar, screw on the lid.
Turn the cup to the side, pressing one hand over the open end so the water doesn't pour out.
Start shaking! Don't let the egg roll around the glass, but rather make sure it's hitting the sides of the glass. You'll begin to see the eggshell cracking . . .
Keep shaking until the shell slips off! Rinse the egg under cold water to remove any small shell shards, then enjoy.

The 1 Thing I Learned in Italy That Changed the Way I Cook
I thought I knew how to cook Italian food . . . until I went to Italy. I got the amazing opportunity to travel to Tuscany to stay at Casa Buitoni, home of Buitoni, the fresh-pasta brand you've likely seen in the refrigerated section at the grocery store. I was in good company with chefs who develop authentic recipes for the nearly 200-year-old brand (it was founded by the Buitoni family in 1827), so I think they know a thing or two about Italian food. After a week of making pasta from scratch, visiting wineries and restaurants among the rolling hills of Tuscany, and eating too many incredible meals to count made by chefs born and raised in Italy, I learned an invaluable lesson that really stuck with me and will change the way I cook for myself from now on.
Simplicity is key, and less is more.
The mentality that surrounds food in Italy is unlike everything typical about food in the US. Italians eat slowly. They savor every single bite and every single moment at the table - "family style" means more than just passing around a plate of food for everyone to try. A young woman who grew up in Italy told me her family never served a meal without setting the table, complete with a white tablecloth. And yes, of course I realize that setting up a gorgeous tablescape with a movie-worthy view is not something most people have the privilege of re-creating at home, but what we can (and should) copy is the overall idea. Eating is a time to unplug from the rest of the world and to connect with the food and the people right in front of you.
And most importantly, authentic Italian cooks let the ingredients shine. If you start with the best quality ingredients you can find, you only need a few to make an amazing dish. I'll be the first to admit that using restraint in the kitchen is not my strong suit. My favorite pasta recipes often involve a long list of ingredients (spaghetti with garlic, white wine, thyme, lemon, and more, for example), but now I realize that there is such a thing as too much, and you don't always need 20 ingredients to make the most flavorful dish.
The best thing you can do is start out with really, really good olive oil. Spend the money on that fancier bottle - it's 100 percent worth it. Because, as I learned, olive oil is just as much an ingredient as pasta or parmesan cheese. When you simply use olive oil to sauté vegetables or throw in a tablespoon to prevent your pasta from sticking before adding other ingredients, the pure flavor gets lost in translation. The rich flavor of homemade olive oil is unlike anything else, and it's truly at the heart of Italian cooking - let it be the star.
Use good salt and fresh garlic. Invest in the freshest seasonal vegetables when you can. And, most importantly, take the time to savor every single bite. I thought this pizza topped with merely tomato sauce and a thin slice of roasted garlic would be boring, but I could not have been more wrong. After one bite, I realized it embodied everything Italian food is about: freshness, simplicity, and flavor. And that's what I'm going to aim to re-create in my own home.

- With a fork: Don't have a whisk? A fork can be substituted in a pinch! A fork incorporates less air than a whisk, so don't panic if it takes a while for peaks to form.
- With a mason jar: Fill a mason jar up to half full with cream, add a clean cork (from a bottle of white wine to avoid discoloration), then tightly twist on the lid and shake it aggressively until the cream reaches the desired thickness.
The Best Way to Store Tomatoes
Although we typically recommend storing tomatoes at room temperature as it best preserves their flavor and texture, it's not quite as simple as that. Here are the best practices depending on how ripe your tomatoes are:
- Keep unripe green tomatoes, stem side down, in a paper bag or in a cardboard box in a single layer. Place in a cool area until they turn red in color.
- Perfectly ripe tomatoes should be kept at room temperature on the counter away from sunlight. Make sure they're in a single layer, not touching one another, and stem side up. Consume within a couple of days.
- Overripe tomatoes that are soft to touch with very red flesh are best kept in the fridge. The cold air will keep the tomatoes from ripening more, and they should last for another three days. Before eating refrigerated tomatoes, take them out of the fridge and let them come to room temperature. This will allow the fruit to develop some of the flavor it has lost due to refrigeration.

Are Spiralized Veggies Actually Worth the Hype? A Pasta Enthusiast Investigates
Erin, 25, addicted to pasta. Thanks to my upbringing in a large Italian family, my obsession with carbs started early on and has very much carried over into my adult life. My idea of a good dinner involves a big-ass bowl of pasta with plenty of garlic and parmesan cheese, so I've been totally hesitant to get on board with the increasingly popular spiralized-veggie trend.
Yes, I love zucchini, but zucchini posing as noodles? Can't fool me. But just when I tell myself I can get by on an 80-percent-pasta diet, Adult Erin chimes in and reminds Young Erin that she can't (well, can, but really shouldn't). So, somewhat begrudgingly, I decided to try zoodles to see if I approve of all the hype. Here's how it went.
First thing's first - using a spiralizer is FUN. You get to watch a stumpy vegetable transform into tons of twirly strands, and it's pretty mesmerizing. I used the Inspiralizer by the founder of the blog Inspiralized, but you can use any spiralizer or even spiralize veggies without a spiralizer, too. What I liked about this tool is it suctions to your counterop to prevent slipping, and you don't have to handle the different blades with your hands. You turn a nob to choose the thickness you want (ribbon noodles, fettucine, linguine, or spaghetti), and you just use your hand to turn a handle as the zucchini pushes forward into the blade, and zoodles start to spill out on the other side.
After successfully spiralizing three zucchinis, I took a moment to admire my handywork. Check out all those twirly strands of veggies! Notice how I am not calling these "noodles," because that's just sacrilege.
Then comes the cooking. The perk of cooking zoodles is you don't have to wait around for a big pot of water to boil. All you have to do is sauté them in a pan with a little olive oil and salt until they're softened, which takes about five minutes. This is the closest thing you'll get to mimicking the al dente texture of perfectly cooked pasta.
Once the zucchini is cooked, you can customize it just like you would any pasta dish. I added leftover slow-cooker bolognese sauce and topped mine with parmesan cheese and a little fresh basil. After marveling at the final product, I decided I was indeed excited to try it. And guess what? I really, really liked it! The hearty sauce rounded out the vegetable-ness of the zucchini, and getting the satisfaction of twirling the zoodles around my fork almost tricked me into thinking I was eating spaghetti. The best part was the difference in how I felt after eating a whole bowl of zoodles versus actual noodles: no bloated feeling! No carb crash! I was full and satisfied, and I didn't want to immediately take a nap. Also, I decided zoodles are definitely better than the other impasta (get it?), spaghetti squash. I am . . . officially . . . on the zoodles train. I'm definitely going to make this again. But I'm just not going to call it pasta.
