Menu planning for the holidays is no joke. Sure, when you first think about it, the whole process seems pretty simple and straightforward. You roast a big turkey, make a few sides, throw in a few rolls, and you're good to go.

It's when you actually sit down to make your shopping list that things start getting real.

A million thoughts start running through your mind. Is a 19-pound turkey big enough? Shoot, maybe not. Maybe we should serve ham, too. Add ham to the list. Sweet potatoes with marshmallows or without? No, wait. No marshmallows. A brown sugar pecan topping is better. SO. MUCH. TO. DO.

I've hosted holidays in our home for quite a few years now and, while there will always be a million things running through my mind as I plan, I've gotten pretty good at coming up with a well-rounded menu!

One thing that I have realized over the years is that the first draft of my menu usually ends up a little bit on the rich side. (Yes, I have a first draft. I take this holiday hosting thing very seriously!)

I love to serve a variety of casseroles with our turkey, stuffing, and mashed potatoes and, while everything I plan to make is absolutely delicious, my menu usually begs for something simple, fresh, and beautiful to balance out the heavy, rich dishes I initially crave.

That's how these cinnamon butter baked carrots came to be. I wanted to add one more easy-to-prepare side dish to our feast and carrots seemed to be the perfect choice!

I decided to pair the carrots with classic flavors and dressed them with butter, sugar, and cinnamon. Super simple, but absolutely delicious! Sometimes a little bit of simplicity is just what my menu needs.

After baking in the oven, the carrots come out perfectly tender and so, so good. For me, the best part is the sweet, sticky cinnamon butter sauce that the carrots bake in. Once you transfer the baked carrots to a serving platter, you drizzle that irresistible cinnamon butter over the top and it is like the icing on the cake!

If you add these beautiful carrots to your menu, I think it's only fair to warn you that the smell while they are baking is simply intoxicating. Once you get a whiff of that sweet cinnamon bubbling away, you will forget all about the turkey!

Cinnamon Butter Baked Carrots

Original Recipe

Notes

This recipe can be prepped in advance and refrigerated until ready to bake. The amount of cinnamon can be increased to 1 teaspoon if you like extra cinnamon on your carrots.

Ingredients

  1. 15 carrots, peeled and stems removed
    1/3 cup butter, softened
    1/2 cup sugar
    1 teaspoon kosher salt
    1/2 teaspoon ground cinnamon
    1/3 cup boiling water
    1 tablespoon orange juice
    Fresh parsley, chopped, optional

Directions

  1. Preheat the oven to 350°F.
  2. Clean carrots and arrange in a 9" x 13" baking dish.
  3. Using an electric mixer, cream the butter, sugar, salt, and cinnamon. While the mixer is running, slowly add the boiling water and orange juice.
  4. Pour mixture over the carrots and cover the dish with aluminum foil. Bake for 90 minutes.
  5. Remove the foil and transfer carrots to a serving platter. Drizzle carrots with the melted cinnamon butter from the baking dish. Garnish with chopped parsley, if desired.

Is there something to take away from Frozen 2 as an adult, however? While some one-dimensional animated movies can fall flat, Frozen 2 does not - and there is plenty for adults to learn from in the film.

1. Men should be able to freely express their feelings.

Beginning with Kristoff, we see a direct rejection of toxic masculinity that is rare for Disney's prince-type characters. Not only is Kristoff openly flustered and nervous for most of the film because he's worried about messing up his proposal to Anna, he sings about his complicated emotions on the subject in a powerful ballad reminiscent of '80s pop. His character teaches an important lesson about encouraging men to express their feelings in a world that often asks them to conceal them in order to preserve some fictional definition of masculinity.

2. Both partners should be there for each other equally.

Other than Kristoff acting as a model for male expression of emotion, he acts as a model example of a partner. Two key moments of this in the movie came when Kristoff rescued Anna and, instead of assuming that he knew what needed to be done next and acting as a knight in shining armor, he told her, "I'm here. What do you need?" It's a simple line, but it's a great example of a supportive partner asking their significant other what they could do to help while openly confirming that they are there to support them. When Anna is insecure, feeling like she hurt Kristoff and thus made him dislike her, toward the end of the movie, Kristoff maturely responds, "My love is not fragile." This kind of reassurance is important in any relationship, and it's a lesson that adults should say something to affirm their partner in moments of insecurity.

3. It's important to prioritize our own mental health above all.

In the beginning, Elsa is at a place where she doesn't want to put the new life that she's built since the last movie on the line - even for her own well-being - as she hears "a call" that is pulling her away from her kingdom. In many ways, Elsa's predicament can be the same as many adults who feel like they need to please others more than they need to prioritize their own well-being. In the end, Elsa chooses to pass her responsibilities as queen onto Anna so that she can focus on doing what is best for her. This makes a better result for both the family and the kingdom because both sisters can be where they need to be. While prioritizing oneself often feels like a selfish act, Elsa proves that it can be a thing of power and freedom.

4. It's OK to take time to recover.

In a lot of ways, Anna has the most moving song of the film with "The Next Right Thing." The song is a tearjerker that describes Anna's descent into hopelessness and experience with depression upon what is presumed to be Elsa's death. Anna, who has dealt with a lot of abandonment-related traumas, seems to shut down in the song, citing feelings of numbness and emptiness. She is able to pull herself forward with the titular motto of going on "and do the next right thing." The lyrics of this song are particularly poetic, telling the story of Anna "stumbling blindly toward the light" and trying to heal herself when it feels impossible. For many, Anna's feelings of isolation and depression are relatable, but the goal of simply aiming to do the next right thing toward a happier future self is inspiring. Anna's song clearly articulates that the journey toward recovery is not instantaneous, and that one must dedicate time and small actions to recover.

The Best Way to Spend 10 Minutes Daily With Your Child, According to a Parenting Expert

When my son turned three, I became pregnant with our second child, my husband began working a crazy shift schedule, and survival mode became our new norm. I poured my energy and time into creating systems for making everything more efficient. I mastered tricks for getting my toddler to listen so that I could dress him and drop him off at daycare before starting work, I delegated all of my grocery shopping to Instacart, and even started using a robotic vacuum and mop to help me manage the daily mess, but I hadn't figured out a way to prioritize something else that really mattered: spending quality time with my little boy.

As his tantrums became more frequent and intense, my husband and I realized we needed help. Instead of punishing the "bad" behavior, we wanted to get at the root of what was causing him to act out. We took an online Positive Parenting Solutions course led by parenting expert, Amy McCready, and walked away with a simple but powerful piece of advice in just the first session.

Every day, devote 10-15 minutes to having uninterrupted parent/child time and let your child choose what you do together, within reason, of course. Amy refers to this tool as "mind, body and soul time" but encourages parents to name it whatever feels natural for them, even something as straightforward as "Mommy and (child's name)'s special time".

It sounds laughably simple at first, but it's a daily practice that actually requires some discipline. My husband and I decided on a time of day that made the most sense for us to take turns: one before dinner (to occupy our son while one of us cooks) and the other after my son showers and gets in his pajamas (this is when our 6-month-old usually wakes from his nap and wants to eat).

The biggest difference between this special time and general family time is that my son gets to be the star of the show. My husband and I don't have the temptation to engage each other in conversation, which usually differs to us hashing out our laundry list of responsibilities - the very opposite mental state you want to be in during this special time.

We set a visual timer for 10 or 15 minutes so that our son can see how much time we have together, and we make it clear when our time is beginning and ending. Clarifying all of this helps him distinguish our special time from any other time we're interacting. He knows that mom and dad are setting aside time for just him.

Amy also taught us that having our son choose the activity fulfills his need for power - something all kids crave in addition to attention. It's when kids aren't getting power or attention in positive ways that they tend to act out the most. And did I mention that it's fun? Being in a creative state where imaginative and sensory play is the only thing on the agenda feels good! You also learn a lot about your kid's interests.

Since we've put this into practice, it's helped dramatically scale back his insistent requests for screen time, and consequently, the battles to end screen time. It's easier to get him to sit down for dinner and hustle to take a shower when he has something to look forward to. In her online course, Amy goes into a lot more detail and troubleshoots obstacles like what to do on those days when you don't have 10 minutes, how to do this if you have multiple children, how to react when one child interrupts and more. While we've only just started our special time practice, having it become a daily ritual that we prioritize is my biggest parenting goal for 2020.

Former Bachelorette star Becca Kufrin went on The Ringer's Bachelor Party podcast this week and revealed that there's actually a place where production hides the "scorned rings." Speaking to host Juliet Litman, Kufrin mentioned a "ring graveyard."

Kufrin famously returned her engagement ring to Arie Luyendyk Jr. when he broke up with her after his proposal on The Bachelor, but there are unused rings on almost every season of The Bachelorette. After all, the star usually gets two proposals at the end of the show. (Because The Bachelor still subscribes to typical gender roles and has the male lead propose, there's only one ring.) Of the proposals that are accepted, not all work out. In fact, Bachelor couples staying together for the long haul is pretty rare, meaning there are a lot of unused rings out there.

It's not new information that the rings go back to production, of course. Other former contestants have spoken about The Bachelor's contract before, citing that they need to stay together for at least two years after the final episode of their season airs to be able to keep it. But now that we know they're all kept together in a special cursed area, we're dying to see it.
