How to Transform 15 Grocery Staples Into 10 Quick Meals

Cook dinner more often? Challenge accepted. If you're like me, you're all too familiar with the feeling of walking in the door exhausted after a long day and wanting to eat dinner immediately. If my pantry and fridge are bare, there's a good chance I'm going to resort to takeout or garbage (aka popcorn and wine), but if I have a few of these grocery staples on hand, I'm on my way to a nourishing meal in 30 minutes or less. I've made it a habit to keep the following groceries stocked in my kitchen so that I can cook a quick and satisfying dinner, which, If I'm being honest, is pasta more often than not (no shame).

  1. Frozen chicken breasts: Keeping them frozen ensures you don't have to stress about using them before they go bad. Defrost them the morning you plan to cook them.
  2. Frozen salmon: Because sometimes you need a break from chicken, and frozen salmon is affordable and easy to cook.
  3. Pasta: The ultimate blank-canvas ingredient.
  4. Canned staples for protein and flavor: Tomatoes, chickpeas, white beans, capers, and black olives.
  5. Garlic and lemon: Must haves for essentially everything.
  6. Fresh greens like spinach or kale: Fresh vegetables you know you'll use up because you can easily sauté them with any dish.
  7. Eggs: Not just for breakfast!
  8. Bacon: For carbonara, a weeknight savior.
  9. White wine: For adding incomparable flavor to pasta and chicken (and for drinking!).
  10. Fresh herbs like thyme and parsley: Inexpensive additions that go a long way.
