Trader Joe's Released Cauliflower Latkes Just in Time For Hanukkah, and We're Drooling

Trader Joe's has a knack for taking cauliflower and transforming it into something delicious: pizza crust, gnocchi, rice, and even tempura. But the beloved grocery store upped its cauli game just in time for Hanukkah and rolled out cauliflower pancakes in the frozen section.
Instead of traditional fried potato pancakes, these latkes are made with cauliflower, Parmesan cheese, and leeks, with a mix of brown rice flour, potato starch, rice flour, and egg white powder. They are lightly fried in sunflower oil to make them crisp on the outside and tender on the inside, and they would be delicious served with applesauce or sour cream or eaten like a hash brown and topped with ketchup. Plus, they're gluten-free!
Although potato is subbed out for cauliflower, these aren't exactly low-carb: each two-pancake serving has 170 calories, seven grams of fat, 21 grams of carbs, two grams of fiber, two grams of sugar, and seven grams of protein. But if you're a cauliflower fan looking for a delicious (and slightly healthier) spin on the holiday favorite, grab a box of these cauliflower pancakes while they're still in season. Each box has six pancakes and retails for $4.
